A Nice Dinner Salad

I’ll admit it… this is about as close as I can come to making a 30-minute meal; in that regard, I’m no Rachel Ray. However, when the mood strikes me and the ingredients are at hand, I have been known to put together some pretty nice dinner salads. This one was tasty (although Cat, as I’m beginning to find out, is not overly thrilled with roast beef of any type.) The greens: a mix of spinach and romaine. I had some really pretty button mushrooms, some shredded white cheddar cheese, and some leftover flank steak to buff things up, and for something interesting, I made “pickled” great northern beans. (Basically, I rinsed them, tossed with apple cider vinegar, sugar, and very thinly sliced white onion, cut into 1″ lengths, then set them aside to marinate for about an hour before assembling the salad.) I topped the whole thing off with some cracked black pepper, and drizzled a bit of the “marinade” over mine in lieu of dressing. Cat opted for homemade buttermilk herb on his. Light & easy… and rounded out with some toasted egg bread. Weird to eat in the dead of winter, I guess, but I love salads any time of year.

  2. Awesome! :) I eat salads all year round, which is weird to some people, but this one was robust enough not to leave me wanting. Hope you enjoy, and thanks for posting!

  3. I would like to point out that since Rachael is not a trained chef, and is instead “merely” a cook, you are indeed as excellent as she is, if not much better.

    Don’t underestimate yourself as your rocking knows no limit.

  4. Why, thank you… but considering RR’s got about a bazillion shows, magazines, books, etc… and has her face plastered EVERYWHERE here lately.. she’s not doing so bad, cooking school notwithstanding.

    Not that I am any great fan, but she IS getting a whole new generation of young people excited about cooking, like my DIL, who LOVES her. That’s good enough for me… besides she did win an Iron Chef America competition, I heard. To be fair she was with Mario Batali, against Bobby Flay & Giada, but… still… :)

    Not everyone can, or would even like, to make everything from scratch like I do. Last night I had to make homemade egg roll wrappers because I didn’t specify the big ones when I gave Cat a list… I don’t expect most folks have the time or temerity to try that, and don’t expect them to. I just happen to like it. (For the record, the wrappers turned out fine, and weren’t terribly hard at all! They *were* quite time-consuming, though!)
